I keep getting asked to share my Italian version of eggrollinabowl...so DRUMROLL......here tiz! Italiana-in-a-bowl (THM =S) This is a remake of my mothers "vintage" cabbage casserole baked in the oven.
Brown in a skillet:
pound+ ground beef (S) or turkey (E)
Tbs minced garlic
1 cup chopped celery
handful frozen mushrooms (opt)
1/2 chopped green pepper (leave out for auto immune protocol)
1 cup chopped onion
Season meat mixture with:
2 tsp salt
1 tsp Italian seasoning
1/2 tsp garlic powder
1/2 tsp pepper
Tbs Bragg's Aminos
1/2 tsp oregano
dash tobasco
can of crushed tomatoes (can sub pureed butternut squash if auto immune protocol)
in a separate skillet sauté sliced cabbage wedges in a little olive oil or water. Combine the two and serve! This is a hearty winter comfort food (both feed a crowd and stick-to-your-ribs) if served with mashed potatoes (crossover).
CROCKPOT OPTION: after cooking the meat mixture this can be layered with RAW cabbage on bottom, then meat mixture, then RAW cabbage layer, etc. and cooked on LOW for 3 hours or on HIGH for 1-1/2 hours.
