THM Egg-roll-in-a-Bowl (my version)
1 drizzle of sesame seed oil in skillet
1 lb ground country sausage (S) or turkey sausage (E)
NOTE: can substitute scrambled eggs if desired...I mostly use 1/2 pound of meat and add 4 scrambled eggs at the end.1 bag dry coleslaw mix (reserve a handful for garnish) or whole bok choy plus 3 grated carrots
container of fresh mung bean sprouts or can
5 cloves garlic, minced
1 cup each chopped onion, celery and green pepper (omit pepper for auto immune protocol)
1/4 cup Bragg's Aminos
1 teaspoon organic Chinese ginger (or 1-2 drops of ginger oil)
few dashes of Chinese Five Spice
salt and black pepper
In a skillet, brown sausage, sesame oil and veggies. Meanwhile in a small bowl, combine Bragg's and spices; set aside. Pour seasoning mixture into the skillet and stir, continuing to cook over medium heat for about 5 minutes or until cabbage is wilted, but still a bit crunchy. Push aside and scramble eggs in center; mix with rest of dish and garnish with fresh coleslaw mix and sesame seeds.
